This shochu is distilled on the Yakushima Island, which means we use water from the land thoughout the process. We find the water special because it contains less minerals and therefore very soft. "Yakushima Jisugi" are the replanted trees on the Yakushima island. Our shochu is aged in the special barrels which were made of Yakushima Jisugi. (*One note: we have entered this shochu as a barrel aged category, because of its distinct flavors. But strictly speaking, the maturation period can be less than three months.) |
